Powders or Liquids?

Although each of us may have a personal preference in this never-ending debate, we’d like to provide some specific points to help you decide which flavor is easier or better to use. In different applications there definitely are some advantages or disadvantages. For dry mix manufacturing, powders certainly provide easy scaling, low water content and general disbursement by dry blending. In non-dry mixes, oil or water based liquids can provide easy disbursement and volume measuring. To some, liquid is favorable since most flavor components begin in a liquid form.

Certified Organic means that a non-profit, state or private certification organization, accredited by the United States Department of Agriculture (USDA), has verified that products labeled as organic meet strictly defined organic standards.

Our organic products are certified by Quality Assurance International (QAI), which also meets international (IFOAM) standards of organic accreditation. This assures that the client is receiving a traceable, reliable product from origin to plate.

Non-GMO Flavors

For consumers who are mindful of genetically modified organisms (GMOs), Gold Coast Ingredients offers Non-GMO flavors upon request. GCI defines Non-GMO flavors as flavors that do not contain detectable genetically modified proteins nor are they derived from genetically modified sources.

W.O.N.F. stands for: With Other Natural Flavors. W.O.N.F. flavors can be a method of obtaining the best value in natural flavors. Direct concentrates of some of the more delicate or subtle flavors like Blueberry, Strawberry or Raspberry can get quite expensive and require special handling. W.O.N.F. flavors obtain a naturally stronger flavor without the use of artificial enhancers – providing you with the luxury of “all natural” in flavoring your product.

 

Concentrated Flavors

First let’s briefly understand what is meant by concentrated: That which is considered many times stronger than an average strength product. (Note: other than pure vanilla extract and pure oils, there are no government specifications regulating how a company may determine or evaluate a strength or level of concentration.) For example, a gallon of tenfold vanilla will flavor as much product as ten gallons of single fold vanilla. A gallon of eighteen fold vanilla equals eighteen gallons of single fold vanilla in flavoring potential.

Savory Flavors and/or Reaction Flavors are the result of heating proteins or amino acids with sugars for a specific temperature and time. An intimate understanding of the complex Maillard reaction gives us the ability to naturally create vegetarian flavors such as beef, poultry, seafood, as well as complex chocolates and caramels. Gold Coast’s technical savory department continues to innovate and push the boundaries of what is possible in the world of Savory and Umami flavors.

All exhibiting vanilla’s unique characteristics which are subtle and delicious. One of the special qualities of vanilla is its ability to help blend different flavors and make them compatible.

There are two main varieties of vanilla which are grown commercially. The location combined with regional curing processes distinctly influences the predominant characteristics of the
vanilla beans.
