Consumers are becoming more curious, experimental and daring when it comes to snack, meal, dessert and even beverage flavors. Gold Coast Ingredients decided to ask one of our very own R&D specialists, Phillip Pratts, why are people craving “sweet & spicy”, “sweet & salty” and “savory & sweet” flavors?

Negative food pairings, or mixing combinations of foods that do not share similar flavor compounds, accentuates the flavor of foods. When ingredients are too similar the flavors are actually less compatible. The synergy of negative food pairings can have unexpected results.

Caviar and white chocolate may seem a strange mix but might actually go well together.
